a couple bumps.

The first day of this diet was great. I felt wonderful and I was so inspired by all 45 people who came to our first Engine 2 meeting but then I was bad and I paid for it the next 2 days.

Mistake number one: I didn’t eat any dinner until I got home that night at 9:30pm.

Mistake number two: Dinner consisted of unsalted baked corn tortilla chips, fresh salsa and a big bowl of watermelon. Delicious but not at all nutritious.

I woke up the next morning feeling exhausted and run down. All I wanted to do was sip on a very large cup of coffee and drive through McDonalds for an Egg McMuffin. I stayed strong and instead had my Yerba Mate green tea and Rip’s Big Bowl but my energy got the best of me and for most of the day I only grazed on carrots, blueberries, and a bowl of Roasted Red Pepper Soup. I was not enjoying this diet at all.

With day two in the books I woke up ready to start fresh again. I started my day with a big bowl of cereal topped with blueberries and cup of green tea. Snacks consisted of whole wheat bread with a little nuttzo spread, fresh squeezed oj, more carrots and more blueberries. I was feeling pretty dang good now. Lunch was a big fat salad from the Whole Foods salad bar topped with sprouts, roasted beets, cucumber, artichoke hearts, black quinoa, sunflower seeds and no-oil fig and balsamic dressing and raspberries for dessert. The best part of the day was dinner. It was Friday and Steve was coming home from a week in San Francisco. We wanted to eat out and spend some time together so we headed to The Counter where we both had their homemade veggie burgers on multi-grain buns. I topped mine with avocado, green chiles, tomatoes, organic spring lettuce and very small amount of BBQ sauce. It was absolutely delicious! Oh and I had a beer. A very cold, and very delicious beer. I’m proud to say that I am back on track.

  1. I think you are doing great, everyone falls off their bike once in a while and they pick themselves up and start over again. I am loving this diet, I am happy, healthy and full. I haven’t lost any weight but I love having a big bowl of oatmeal with raisins, nuts, agave nectar, and cut up fresh fruit; it fills me up all morning! I am trying different recipes with Quinoa, Lentils and Beans and so far my husband only disliked mixing lentils with couscous. LOL
